Frugal Meal: 3 Bean Beef Chili

3-bean-beef-chiliHere is a gourmet frugal meal that you can make for around $12.00! Perfect recipe to save back with the cool winter months coming soon. This will feed 3-4 people so you are getting a meal for about $2.50-$3.00 per person, a really great value.

Ingredients:

  • 2 cans of tri-blend beans from Kroger (Black beans, pinto beans, kidney beans)
  • 1 can of corn
  • 3/4 lb of ground beef
  • 1 red onion, chopped
  • 1 green bell pepper, diced
  • 1 tomato, de-seeded and chopped3-bean-beef-chili-2
  • Tomato paste – 2 tsp
  • A handful of cilantro, chopped
  • Salt and freshly cracked black pepper to taste
  • 1/2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Oil – 1 tsp + 1 tbsp
  • 4 Cups of water

Instructions:

Heat a skillet with 1 tsp of oil and brown your ground beef in it. Fry, stirring often and breaking the lumps as you go. Using a slotted spoon, transfer to a bowl. Keep aside.
Heat 1 tbsp of oil in a pan and fry the onions and green bell pepper till fragrant and then add the diced tomatoes along with the tomato paste. Cook for a few minutes and stir in the spices – garlic powder, dried oregano and smoked paprika. Now, add the 3 bean mix and the corn and give everything a good toss. Add the browned beef and chopped cilantro and mix it in. Season with salt & pepper.
Add water, cover and cook for 30 minutes.
Serve warm.

Easy Crockpot Enchilada Casserole

crockpot-enchiladas-1Here is a great recipe that you can make easily for Crockpot Enchiladas. We used Cream of Cheese Soup but you could easily substitute in Cream of Mushroom soup (or another of your picking). We made this entire meal for less than $11.50, so not only is it easy to make, its also easy on the budget. This should serve 3-4 people fine, you will have left overs if you make it for 1-2 people.

Crockpot Enchiladas Ingredients:

1 lbs. ground beef
1 can cream of cheese soup
1 – 22 oz. can red enchilada sauce
1 – 8 oz. shredded Mexican cheese
Soft taco flour tortillas
Seasoning salt
Garlic powder

Crockpot Enchiladas Directions:
1)Season ground beef with seasoning salt and garlic powder. Brown ground beef on high.
2)Line the bottom of the crockpot with enchilada sauce to prevent tortillas from sticking to the crockpot.
3)Add a layer of tortillas to the crockpot; rip as needed to cover the whole bottom.
4)Spread cream of cheese soup over the tortillas. Layer enchilada sauce, ground beef, cheese, and more tortillas.
5)Layer ingredients 3 times. Top with remaining enchilada sauce and cheese.
6)Cook on high for 3-4 hours or low for 6-8 hours.
7)Let cool 10 minutes before serving.

Cheap Baked Sloppy Joe Casserole

sloppy-joe-casserole-1Constantly on the search for fun, cheap and easy meals to make here is a great Sloppy Joe Casserole that you can easily make and it costs just $8.98 for the entire meal. You may even get some left overs on this one and the kids will love it!

Ingredients:

  • 1 Pound Ground Beef
  • 1 Can of Manwich
  • 2 Packages of Crescent Rollssloppy-joe-casserole2
  • 2 Cups of Mozzarella Cheese

Instructions:

  1. Preheat oven to 375 degrees.
  2. Spread out one can crescent rolls between two pieced of wax paper. Use rolling pin to gently roll out all creases. Place flattened crescent rolls on the bottom of a greased 8×13 casserole dish. Bake for 12 minutes.
  3. Brown ground beef in a skillet. Once cooked add can of sloppy joe mix.
    Set aside.
  4. Once crescent rolls are cooked, sprinkle with mozzarella cheese. Cover cheese with sloppy joemeat.
  5. Roll the second container of crescent rolls between two sheets of wax paper. Gently cover sloppy joe with flattened dough. Bake at 375 degrees for 12 minutes. Let cool.
  6. Serve warm. Crescent rolls can be used as a bun, or eaten with a fork.

Easy Crock Pot Chicken and Dumplings

This Easy Crock Pot Chicken and Dumplings only requires 5 ingredients and it cost me just $10.14 to make for the whole meal. This one will feed 3-4 people so you are paying just $2.50-$3.50 per person to eat. For 2 people it will give you left overs.

  • 3 boneless, skinless chicken breasts
  • 2 Tbsp butter
  • 2 cans cream of chicken soup
  • 1 (14.5 oz) can of chicken broth
  • 1/2 onion diced
  • 1 Tbsp dried parsley
  • 1/2 can Grands flaky refrigerator biscuits (I used a whole can, I like dumplings)

Instructions:

  1. Place Chicken breasts in crock pot and top with butter.
  2. Add 2 cans of cream of chicken soup
  3. Add chicken broth
  4. Add diced onions and dried parsley
  5. Cover and cook on high for 4-5 hours or low 8-9 hours
  6. Once cooked shred the chicken
  7. Cut biscuits into 9 pieces
  8. Add biscuits to the soup and stir
  9. Cover and cook on high for another hour
  10. Serve warm and enjoy!

Cheeseburger Pie Family Meal just $8.40 TOTAL!

cheap-meal-cheeseburger-pieSo I have recently set out on trying to cook meals in a frugal fashion. I originally set out to try to make meals for under $5 but found that impossible, so I have set a goal of regularly trying to find foods that I can make that will be under $10 for the meal (btw, if you have recipes, send them in and I may use them)! I stumbled upon this recipe and found that I could make it for just $8.40 (see my receipt below), could have been cheaper if I didn’t have to buy pickles, or would have been a little more if I had to buy basic condiments!

This meal turned out delicious, in fact, I have made it 3 times and it is a big hit around my house now! It is really easy to prepare, and you can change up the recipe according to your tastes. I don’t typically like onion, but I put it in here, I just make sure to cook it with the meat so that it is more soft and doesn’t have that onion crunch to it!

Ingredients:
1 can crescent rolls
1 pound ground beef
1/4 cup finely chopped onion or 1 teaspoon onion powder (I used white onion for this)
1/3 cup chopped dill pickle slices (I added extra!)
1 teaspoon mustard (I actually didn’t measure on mine, just guessed)
2 tablespoons ketchup (same, I just guessed)
2 tablespoons of Flour
2 tablespoons of dill pickle juice (I used 3)
2 tablespoons of milk
2 cups of shredded cheddar cheese

Instructions:
Prehead oven to 375 degrees
Unroll crescent rolls and press into an 8″ pie pan
Cook ground beef in skilled until browned. Drain.
Stir in onion, chopped pickle, ketchup and mustard. (I cooked my onion with the meat)
Sprinkle with flour, add pickle juice and milk. Cook and stir until thickened and bubbly.
Remove from heat and add 1 cup of cheese (I mixed it in real good).
Pour into the crust and bake for 15 minutes or until edges are golden brown.
Remove from oven, top with cheese and let stand until cheese melts.
Serve topped with extra ketchup, mustard and pickles to taste.
